Made from Sangiovese grapes and matured for some 36 months in 36hl Slavonian oak barrels. Then it is aged for at least 8 months in the bottle before release. The classic ruby color has slightly garnet hues and the intense and complex aroma has notes of red fruit based on marasca cherry along with some ample and intriguing spice sensations.. The mouthfeel is excellent, juicy yet balanced thanks to the classic freshness that distinguishes the estate. The finish is broad and flavorful and very persistent, achieved through high density of vines in the vineyards, attentive choice of vine-stocks according to the characteristics of each part of the estate and the use of highly selected clones. Gemma uses scrupulous care and attention dedicated to each individual vineyard ensure a low yield of healthy grapes characterized by concentration and high levels of color and tannins. The San Carlo estate removes bunches in excess when the grapes begin to change color in order to allow the remaining bunches to ripen perfectly. The harvest is done by hand and the grapes are placed in small crates.
The fermentation takes place in stainless steel vats in a temperature controlled environment. In order to guarantee the best and most delicate extraction of polyphenolicfraction, the wine is pumped over and the cap formed by the skins is broken on a daily basis during fermentation. The malolactic fermentation occurs naturally.

Flavour Great structure. The full body embraces beautiful quality mature tannins that gradually soften in the bottle over time. Great length and finish. The structure is potent, with an excellent balance of tannins and tartness, that tantalise the palate.
Pairings Appetizers: The best pairing comes from mature cheeses. First courses: All recipes made with mushrooms or truffles go perfectly with Brunello di Montalcino, most recommended is with pappardelle pasta and a meat or boar ragu or with pici, another typical handmade pasta from Tuscany. All types of meat: it is best with red meat and game, prepared with bold sauces with strong aromas. Even dark meat chicken will work.
